I realize not everyone the has time or the energy to make meals from scratch, myself included. Sometimes i want something quick but i don’t want to sacrifice health or taste. With that in mind i can put together different foods that were already prepared and make a delicious and nutritious meal the whole family will love.
Chicken or Turkey Salad
1 or 2 pounds store bought chicken or turkey, preferably roasted from the fresh deli section
1 pack of brie cheese, room temperature
1 bunch of fresh cilantro, chopped
1 cup dried cranberries
1 palm full dry Italian herbs
about ¼ cup dijon mustard
salt and pepper to taste
Chop meat of choice into bite sized pieces and add to a large mixing bowl. Tear brie into small pieces and add to chicken. Add fresh cilantro, dried herbs, cranberries and dijon. Mix well. Season to taste, eat and enjoy. This can be served over a fresh bed of leafy greens or sandwiched between some delicious bread. It’s great cold or slightly heated.
