I had a can of albacore tuna in my cabinet and didn’t really feel like cooking dinner. I also had some left over fresh rye bread i’d baked the day before. Using what i had on hand, my Tuna Twist recipe was formed. Nothing like some dazzled up tuna on fresh rye bread – YUM!
2 12oz package albacore tuna
3 TBSP mayonnaise
2 TBSP apple butter
½ TBSP umeboshi paste (pickled plum puree)
½ TBSP dijon mustard
1 tsp celery seeds
1 bunch fresh cilantro, chopped
salt and pepper to taste
Drain water from tuna and place into a large mixing bowl. Add mayonnaise and next 3 ingredients. Mix thoroughly, careful not to mash tuna and leaving some chunks. Add celery seeds and salt and pepper and mix. Last add chopped cilantro and stir until just incorporated. Serve immediately or refrigerate until ready to serve. Enjoy!
