3 TBSP flour
3 TBSP butter
3 to 4 cups whole milk
1lb or more cubed cheddar cheese
1 160z package macaroni noodles
1/2 cup sour cream (optional)
Salt and pepper to taste
Bring to boil water with salt in large pot. Cook macaroni noodles according to instructions.
Heat a medium sauce pan on stove top. Add butter to melt and then flour. Stirring rapidly until flour and butter form a smooth paste. Add milk a little at a time, while stirring mixture rapidly. Keep adding milk until mixture is the consistency of pancake batter. Add cubed cheese. Stir occasionally, until cheese is thoroughly melted and incorporated into mix. Add salt and pepper.
Remove from heat. Strain macaroni noodles. Put noodles into a large baking dish. Pour cheese mixture over noodles and stir until all noodles are covered in cheese sauce. Add sour cream and gently mix.
Place macaroni into about 350 degree oven and bake for about 30 minutes.
